Originally established in 1950 as The Mandarin House, able to accomodate 40-50 customers, the Kowloon Restaurant has grown to a capacity of 1200 seats and has become one of the premier multi-concept dining establishments in the United States. In 1958 Madeline and Bill Wong bought out the first generation owners and began the second generation of family ownership of the restaurant. They changed the name to Kowloon Restaurant and Cocktail Lounge and began to grow the business. In the next 50 years the family added five additions to the original building and increased the capacity to accommodate 1,200 customers. Chefs Jose Garces and Steven Seibel are opening Hook & Master in Philadelphia, PA. Hook & Master aims to be a tiki inspired restaurant that combines Chicago-style pizza, tiki drinks, and craft beer. Plans call for 80 outdoor seats in the "octopus garden", 45 indoor seats at the tiki lounge, and 25 indoor seats at the pizzeria. Takeout will be available. The Kraken octopus theme will extend throughout the location along with some touches of Chicago, Garces' home town. The location at 1361 North 2nd Street, Philadelphia, PA, was formerly the Liquid Room.
The Mai-Kai was created by Bob and Jack Thornton. The brothers visited Don the Beachcomber’s in Chicago, as children, and even at that young age said they wanted to open a similar place. Their original design cost 300 thousand dollars; it was the most expensive restaurant built in 1956. In its first year it earned over one million dollars, becoming one of the most successful restaurants of its time and for many years it sold more rum than any location in the United States. The Mai-Kai became rather expansive in time; it includes eight dining rooms, a bar, tropical gardens with walking paths and waterfalls, a stage in the center to showcase the Polynesian Islander Revue floor show, and a gift shop.
